30g sugar
Spot of salt
2 medium eggs (approx. 100g)
1.5 egg yolks (30g)
250ml milk
40g spread
Beurre Noisette
To make the ‘beurre noisette’ nutty spread in French, place margarine in a dish and cook tenderly until all the water in the margarine cooks off and the milk solids will separate to the lower part of the container and delicately brilliant. This will spit tenderly and once quietens down will have turned a nutty earthy colored tone, put this to the side to cool. This adds extraordinary flavor and keeps the flapjacks clammy.
Flapjack hitter
Next consolidate the salt, flour and sugar with the eggs in stages to make a smooth hitter. Then add the milk in stages lastly the beurre noisette (margarine).
